Healthy Avocado & Egg Toast
A perfect, nutritious breakfast featuring crisp sourdough bread topped with creamy mashed avocado and a warm poached egg.
Instructions
Toast the sourdough bread slice to your desired level of crispness.
Cut the avocado in half, remove the pit, and scoop the flesh into a small bowl. Add lemon juice, olive oil, salt, and black pepper. Mash gently with a fork, leaving some chunks.
Bring a small pot of water to a gentle simmer. Add vinegar. Crack the egg into a small ramekin.
Create a gentle whirlpool in the simmering water with a spoon. Carefully slide the egg into the center of the whirlpool. Poach for 3 minutes for a runny yolk.
Remove the egg with a slotted spoon and drain on a paper towel.
Spread the mashed avocado generously over the toasted sourdough bread.
Top with the poached egg, and sprinkle with red pepper flakes, flaky sea salt, and extra black pepper. Serve warm.
